Crab Apples flower from March to May with pink buds and white blossom flushed with pink much sought after by bees. The fruit looks like miniature apples and is yellow/green tinged with red. Although very sour when raw, the crab apples have a high pectin content which makes them ideal for jelly making - or apple juice when blended with less astringent apple varieties. Pick after frost. Crab Apple is the 3rd most mentioned species used for boundary hedging in Angle Saxon times and it supports 90 different species of insect and birds.
